I was on a webcast yesterday with Jim Kukral and he had an awesome idea for a restaurant.

Add a gross sounding item to your dessert menu like "chocolate broccoli soufflet".

When your waiters ask if anyone wants dessert they can add in "Maybe you'd like to try our signature one of kind chocolate broccoli soufflet".

If its odd enough or gross sounding enough people will at least have an emotional response, ask more questions like "are you serious? could it really be good?"; and whether they try the dessert or not they will definitely talk about your restaurant, the odd menu item and probably even how good the other stuff was even if they didn't try the chocolate broccoli soufflet.

I'd add in my extra 2 cents to make sure its at least kind of tasty.  Maybe just add plenty of butter or fry something since we are in the south.
